Super Simple Chicken Pesto Pasta

This super simple Chicken Pesto Pasta is my 'go to' when I want something quick, tasty, filling and high in protein. It's an easy weeknight winner that still feels like comfort food.


Guidance: Super simple and super tasty!

Ingredients:

  • 100g raw chicken

  • 50g raw pasta (shape of choice!)

  • 30g classic basil pesto

  • 20g reduced fat 30% cheddar cheese (grated)

  • 50g courgette (cubed)

  • 50g mushrooms (sliced)

  • Side salad (optional)


Instructions:

  1. Pop the chicken in the air fryer or use fry light to cook in a pan

  2. Boil water in a saucepan and cook the pasta

  3. When the chicken is close to being cooked, add in the cubed courgette and sliced mushrooms

  4. Drain the pasta, add the cooked chicken & veg. Then stir in the pesto (no need to do this over heat)

  5. Serve in a bowl, sprinkle the cheese on top and enjoy!
