Easy Chicken Curry

Rich, bold and full of flavour! Tender pieces of chicken simmered in a spiced tomato base, finished with a swirl of yoghurt and topped with fresh coriander. Perfect for a cosy night in.


Guidance: Can easily be made suitable for vegetarian diet - swap chicken for tofu.

Ingredients (one serving):

  • 150g chcken breast

  • 50g red onion

  • 120g 0% greek yoghurt

  • 125g passata

  • 1x chopped garlic clove

  • 2 tsp of each of the following: paprika, cumin, turmeric, garam masala

  • 1 tsp salt & pepper

  • fresh coriander for garnish


Instructions:


1) Make a marinade for the chicken with half the spices and 60g of the yoghurt.

2) Dice the chicken, cover in marinade and leave in the fridge overnight.

3) Cook the marinaded chicken in a hot pan, then remove.

4) Add chopped onion to the pan with the chopped garlic. Cook until soft.

5) Add the passata, the remaining yoghurt and the remaining spices to the pan and lower the heat to simmer.

6) Stir the chicken in and leave to cook for a further 5-10 mins.

7) Place portion on plate and top with fresh coriander and an extra dollop of yoghurt if wished
