Ham & Egg Cupcakes

A simple high protein snack that's quick to prep and perfect when you have a busy week.
Guidance: Enjoy warm or cold.

Ingredients (8 servings):
8 large eggs
150g sliced lean ham (thick enough to act as a ‘cup’)
60g grated reduced fat cheddar or mozzarella
50-100g pepper, finely diced
50-100g onion or 2 spring onions, finely chopped
1 tbsp Greek yogurt (for extra protein + fluffiness)
Salt & pepper to taste
OPTIONAL
Chilli flakes
Paprika
Fresh parsley or chives
A sprinkle of parmesan on top
Instructions:
1) Preheat your oven to 180°C (350°F) and lightly grease a muffin tray.
2) Line each muffin cup with ham, shaping it into little ‘cups’
3) In a bowl, whisk the eggs with Greek yogurt, salt, pepper, and any seasoning you love.
4) Stir in the veggies and cheese.
5) Pour the mixture into the ham cups, filling almost to the top.
6) Bake for 18–22 minutes until the tops are firm and lightly golden.
7) Let them cool for a couple of minutes, then pop them out and enjoy! can be eaten warm or cold!
