These Double Chocolate and Blueberry Baked Cumpets are a cosy twist on the classic crumpet. Perfect for satisfying a sweet tooth, this easy recipe combines juicy bluberries and rich chocolate for the ultimate breakfast (or dessert!).

Guidance: This takes 5-10 mins to throw together and approx 15 mins cooking time. It is high protein and well worth the effort! You can vary it up with different berries as you wish too!

Ingredients:

  • 2 x crumpets

  • 1 medium egg

  • 50ml unsweetened almond milk

  • 30g chocolate protein powder

  • 50g blueberries

  • 10g white chocolate chips

  • 15g blueberry jam


Instructions:

  1. Layer the crumpets up.

  2. Mix the egg, milk, protein powder and a dash of water and pour over the crumpets.

  3. Pop the blueberries, jam and chocolate chips on top.

  4. Bake at 190 °C for approx 15 mins.

  5. Enjoy!
